Notes, Tips, and Variations
For the base, you can use regular dry biscuits or digestive cookies, and optionally add a teaspoon of cocoa powder. You can also prepare the base in the traditional way, by crushing the cookies and mixing them with melted butter.
You can replace the spreadable cheese with mascarpone.
If you need to increase the quantities, choose a cake pan of the right proportions, so the cream layer isn’t too thick or too thin. However, if you need to prepare the cheesecake for many people, I recommend making 2 or 3 smaller ones instead of one large one, so the slices hold up better.
