Notes and Variations
You can prepare the cream following your usual recipe. You can also use only all-purpose flour or only corn starch (40 g in total).
For the base, you can also use just crumbled cookies, without butter. If you prefer, you can replace the cookies with ladyfingers slightly dipped in milk.
I recommend adding the pine nuts only at the end, because staying too long in contact with the cream would make them lose their crunchiness. If you don’t have them, you can use almonds, pistachios, or chocolate chips.
I used some small glasses, but if you prefer, you can use normal ice cream or dessert bowls.
