Strawberry Mimosa Roll 🍓
Among the endless versions of mimosa that I have proposed, a strawberry mimosa ☺️ could not be missing, but I chose to make a simpler and quicker version: a mimosa roll! A delicious dessert perfect for International Women’s Day on March 8 and beyond!

Ingredients for the Strawberry Mimosa Roll:
- 4 eggs
- 2/3 cup sugar
- 1/2 cup flour
- 1/3 cup vegetable oil
- 4 water (Hot)
- lemon zest
- vanilla
- 7 oz strawberries
- 1/4 cup sugar
- Half lemon juice
- 3/4 cup whipping cream
- 4 oz mascarpone cheese
- 1/2 cup sugar
Steps
The preparation of the Strawberry Mimosa Roll is very simple, watch the video HERE.
Base preparation: First, separate the yolks from the whites. Add sugar in equal parts. Begin to whip the egg whites using an electric mixer. Add hot water on top of the yolks and start beating.
Add oil, grated lemon zest, vanilla flavor, and flour a little at a time. Mix, then fold in the egg whites.
Place the obtained mixture in a 14×14 inch baking pan lined with parchment paper. Spread and level, then bake at 356°F for about 20 min.
Strawberry preparation:
Clean and cut the strawberries, add sugar, lemon juice, and cook for about 10 min, stirring occasionally. Let cool.
Once the base is cooked, cover it with another parchment paper sheet, flip it, and remove the attached parchment paper. Cut the ends, then cut into cubes.
Spread the strawberry mixture on top.
Cream preparation:
Put the mascarpone, sugar, and cream and beat. Spread about 3/4 of the obtained cream on top.
Roll up and refrigerate for a few hours. Then cut the ends, cover the roll with the remaining cream.
Place the previously cut cubes on top. Decorate as desired!
