Avocado and yogurt
Place the pulp of the ripe avocado and the yogurt on a plate. Add a few drops of lemon juice to the avocado to prevent it from oxidizing and losing its vibrant green color.Mash the avocado and yogurt with a fork and reduce it all to a mousse.
Once a uniform sauce with avocado and yogurt is obtained, grind the flax seeds with a mortar or coffee grinder.
Pour the mousse into a small bowl and garnish with slices of clementines (or other seasonal fruit), walnuts (or other dried fruits), and chopped flax seeds (or other seeds).
STORE avocado and yogurt
Store the avocado and yogurt mousse in an airtight container in the refrigerator for up to 2 days.
It is best to consume this sauce fresh, as avocado tends to oxidize and change color. To slow this process, it is important to add a bit of lemon juice (or other citrus) before storing it in the fridge.
