Air Fryer Polenta Sticks. A tasty savory recipe perfect for homemade appetizers, as an original starter or even as a vegetarian main dish.
It’s a creative way to use leftover polenta, and at the same time, they make an incredibly tasty, crispy appetizer with endless variations.
If you don’t have ready polenta, alternatively buy a ready-made polenta block.
These polenta sticks can be enjoyed alone like chips or dressed with any seasoning, taking advantage of the neutral taste of polenta.
Cooking in the air fryer makes everything lighter and allows you to easily get crispy polenta without the risk of making it heavy with traditional frying oil.
It has all the benefits of polenta sticks: crispy outside, soft inside, and truly delicious.
Moreover, it contains no meat, fish, or other animal-derived ingredients, thus pleasing everyone, even those following a vegetarian diet.
First, prepare the polenta, we used the long-cooking homemade one gifted by my brother, but instant is also fine. After cooking, we spread it in a rectangular dish.
Air fryer polenta chips are a tasty alternative to French fries, and much healthier.

- 4.2 cups water
- to taste fine salt
- to taste vegetable oil (spray)

Steps
Air Fryer Polenta Sticks
Prepare the polenta in the traditional way (also using instant polenta).
First, weigh the flour and measure the water.
Take a double-bottomed pot, pour the water and add the salt.
Add the flour and mix very well with a whisk.
Then turn on the stove and continue stirring until it starts to boil, at this point add a drizzle of oil and continue stirring for a few minutes.
When you see the mixture become smooth and homogeneous.
Move the pot to the smallest gas burner, cover it with a lid, and cook on low heat for 45 minutes, without stirring.
(If you use quick-cooking cornmeal, which still gives good results in very little time.These have a cooking time of 4 or 5 minutes).

When the polenta is cooked, pour it into a container from which you will derive a block.
Cover the block.Let the block cool before using it.
Alternatively, buy a ready-made polenta block.
Tip: Once the polenta is completely cooled, put it in the refrigerator overnight to solidify further.
The next day, cut the polenta into thin slices and then into sticks, and spray the air fryer oil on both sides.
We like them plain, but if you prefer…..
Add the spices you like, such as salt, sweet and spicy paprika, rosemary powder, and garlic powder.
Cook the air fryer polenta chips until they are crispy and golden.
Place them on the air fryer basket and cook at 392°F (200°C) for about 7-8 minutes.
Tip. (Space them out without overlapping).
You can serve them as an appetizer, snack, or side dish, and they are excellent to enjoy in good company.
