Mimosa Soft Tart with Cream and Berries

I made mimosa cakes for everyone’s taste among friends and family 🤣 and neglected myself… let’s say, however, that I have now made up for it with this cake.☺️ I made it to my liking with my “beloved” berries and chantilly cream for the filling, and for the base, this time I chose cocoa! I can’t find the right adjectives to best express the goodness of this tart! It’s a simple, showy dessert, but above all, it’s perfect for International Women’s Day, on March 8th!

Ingredients for Mimosa Soft Tart with Cream and Berries:

  • 2 eggs
  • 2 egg whites
  • 3/4 cup sugar
  • 3/4 cup flour
  • 3 1/2 tbsp vegetable oil
  • 1/4 cup unsweetened cocoa powder
  • Half packet baking powder
  • 2 egg yolks
  • 1 cup milk
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • lemon zest
  • 1 cup heavy cream
  • 7 oz berries
  • 1/4 cup sugar
  • Half lemon (Lemon juice)

Steps

  • Base preparation:

    Put the eggs, egg whites, and sugar and whisk. Add the cocoa, oil,

  • Add the flour, baking powder and mix well. Pour the mixture into the soft tart pan (with double bottom)

  • bake at 350°F for about 25 min.

    Cream preparation:

    Put the yolks, sugar, cornstarch, and milk gradually, stirring. Add the lemon zest

  • Heat the mixture to thicken it. Keep stirring. Once thickened, transfer it to a container

  • cover it and let it cool.

    Berry preparation:

    In a saucepan, put the berries, sugar, lemon juice and cook for about 10 minutes, stirring occasionally. Let cool.

  • Once the base is baked and cooled, flip it and remove the mold. Moisten it with flavored syrup to taste. Place the berry mixture on top. Combine the whipped cream with the cold custard

  • pipe it on top using a piping bag.

  • Decorate with cubed sponge cake and fresh fruit to taste.
