Gnocchetti with Sausage Sauce and Stracciatella, a tasty main course, easy and quick, loved by everyone, adults and children, perfect for a family lunch.
While preparing the sausage sauce, I added a bit more sausage which I then used to make these delicious crostini: main dish and appetizer at once.
If you prefer (and if you have time), you can replace the gnocchetti with homemade fresh gnocchi or use other pasta shapes, either short or long: here I used De Cecco casareccia pasta. However you prepare it, it’s always a hit.

Ingredients
- 1.1 lbs potato gnocchetti
- 4 tbsps extra virgin olive oil
- 1/2 onion
- 1 clove garlic
- 0.55 lbs sausage
- 1/2 cup white wine
- 14 oz tomato passata
- to taste salt
- to taste stracciatella (amount to taste)
- to taste parsley (or fresh basil)

Steps
First, in a large pan, heat 4 tablespoons of extra virgin olive oil, a pinch of chili pepper (optional), and the onion finely chopped with a cord chopper (practical and fast) and let it caramelize.
Remove the skin from the sausage and crumble it by pressing it with a fork, and sauté it with the soffritto for a few minutes. Once well browned, add the white wine and let it evaporate.
Meanwhile, boil the gnocchetti in plenty of salted water, drain them as soon as they float to the surface (about 2 minutes cooking time) directly in the pan with the sausage and tomato sauce and mix well.
Finish the dish with stracciatella, finely chopped parsley (or basil), and a grated sprinkle of parmesan cheese. Serve.
