Puff Pastry Bundles with Champignons

Ingredients RECIPE PUFF PASTRY BUNDLES WITH CHAMPIGNONS

  • 1 package puff pastry (maybe 1 and a half packages)
  • 7 oz champignon mushrooms
  • 1 clove garlic
  • 1 bunch chopped parsley
  • 1/2 cup cooking cream (light version this time)
  • 1 egg yolk
  • 2 tbsps extra virgin olive oil
  • to taste poppy seeds
  • to taste salt

FOR THE PREPARATION OF THE RECIPE PUFF PASTRY BUNDLES WITH CHAMPIGNONS

  • I peel the garlic and put it in a pan with the extra virgin olive oil and as it sizzles I add the washed and thinly sliced champignons.

    I leave it on medium-high heat, letting the water in the mushrooms evaporate and seasoning with salt and pepper if desired, then I remove the garlic.

  • After about 7/8 minutes the mushrooms will be cooked, and I add the cooking cream, which, given the small amount, should just add a little aroma and creaminess without being too caloric!

  • I mix well, add a bit of parsley, and I can proceed in two ways:

    either keeping the mushrooms in pieces or blending part of them and mixing the mushroom cream with the whole slices.

    Personally, I chose the second option by chopping some, but you can choose whatever suits you best at the moment!

  • I unrolled the package of ready-made puff pastry and marked squares of about 2.5 inches; let’s say in the rectangular package, you get 10/12 filled bundles.

    I placed a bit of warm champignon mushrooms in the center of each square and joined the opposite corners to make a bundle.

  • I beat the yolk with a tablespoon of water and brush it over the surface of the puff pastry bundles with champignons, then I sprinkled each with a pinch of poppy seeds.

  • I then bake at 375°F, cooking and browning these puff pastry bites filled with champignon mushrooms evenly!
