Wow today I made coconut ice cream! I am very pleased to share this recipe with you because it is tasty and beloved by children but also by adults. It’s my son’s favorite flavor, and along with chocolate, it’s a very indulgent idea. To make this recipe I used coconut flour and my Ariete ice cream maker, and once the coconut ice cream is ready, I put it in the freezer to set for a couple of hours. It is a great satisfaction to make it at home, especially to hear my son say: mom, it’s too good! Making me even happier 😍

Ingredients for Coconut Ice Cream
- 7/8 cup heavy cream
- 1 1/4 cups milk
- 1/2 cup sugar
- 1 1/4 cups coconut flour

Prepare the Coconut Ice Cream
Place the milk, cream, and sugar in a non-stick saucepan. Turn on the stove to low heat and stir with a whisk until the sugar is completely dissolved. Then turn off the heat and add the coconut, mixing well with a spatula, and let it cool completely before placing it in the refrigerator for about ten minutes. Once it’s well chilled, pour it into the ice cream maker and turn it on for the time required by your machine; my ice cream maker usually takes 40 minutes. When the ice cream is ready, put it in the container; if I can’t resist, I taste it immediately or store it in the freezer.
