Ingredients for Apple and Raisin Cookies
- 3/4 cups all-purpose flour
- 4 tbsp butter (at room temperature)
- 1/4 cup sugar
- 2 apples (small or 1 large)
- 1/3 cup potato starch
- 1 tsp baking powder
- 1/4 cup raisins
- 1 egg
- 1 pinch ground cinnamon
Steps for Apple and Raisin Cookies
To start preparing these cookies, soak the raisins in warm water and wait for the butter to become soft enough; I recommend taking it out of the refrigerator in advance. Once the butter is soft enough, beat it with the sugar in a bowl using electric beaters.
Add the egg to the butter and continue beating, gradually add the sifted flour, potato starch, and baking powder. Continue to blend all the ingredients.
Cut the apple into small cubes and toss it in with a pinch of cinnamon (optional), then drain and dry the raisins, and add them to the mixture. Stir now with a spatula.
Line a baking sheet with parchment paper and use a spoon to scoop some of the mixture and place it on the tray, spacing the balls apart. I used an ice cream scoop.
Bake in a preheated oven at 340°F and let the Apple and Raisin Cookies bake for about 20/25 minutes, always adjust according to your oven. The duration also depends on the size of the cookies.
Once baked, let them cool before transferring them to a serving plate. Dust them with powdered sugar and serve immediately.
