An easy and impressive dessert enriched with caramel. If you want a lighter dessert, you can skip the caramel and sprinkle the ricotta with honey once baked.

This sweet ricotta lends itself to many variations. You can add chopped nuts inside and on top of the ricotta, or soaked raisins in rum, or even lemon or orange zest.

Ingredients for Baked Sweet Ricotta

  • 1 lb ricotta (cow or sheep)
  • 1/3 cup sugar
  • 2 tbsps cornstarch
  • 1 egg (medium)
  • 3/4 cup milk (whole or skim)
  • 1/2 cup sugar
  • 3 1/3 tbsps water

  • 4 Muffin Molds
  • 1 Bowl
  • 1 Electric Whisk

Steps

  • First, prepare the caramel. Place the sugar and water in a small saucepan.

    Heat without stirring until dissolved.

  • Once it turns amber, stir with a spatula and while it’s still hot, pour it into the 4 muffin molds.

    Spread evenly on the sides and let cool.

  • In a bowl, whisk the eggs with the sugar until well combined.

    Dissolve the cornstarch in the milk and add it to the eggs.

  • Incorporate the ricotta into the mixture and mix briefly with the whisks to integrate.

  • Distribute the ricotta mixture into the molds and bake in the center of a preheated static oven at 356°F for 30 minutes.

  • Once baked, let the ricotta cool in the molds, then refrigerate for 4 hours.

  • After the resting period, unmold onto individual plates, decorate with mint leaves or crushed nuts, and serve.

Variations and Tips

You can flavor the baked sweet ricotta with grated orange or lemon zest in the batter.

Enrich the ricotta with chopped nuts both inside and on top.

I recommend NOT removing it from the molds until serving so the caramel is fully melted.
