Apricot and Yogurt Popsicles are a fresh, healthy, and delicious idea to enjoy ice cream in the summer as a snack or as a dessert. When temperatures rise, there’s nothing better than good ice cream, especially if made at home! To make it without an ice cream maker, we can prepare coffee ice cream with cream and condensed milk, or for a fruit version, we can use cherries or peaches when they are in season, or other types of fruit. And if we want a slightly lighter version that’s still delicious? We’ve got the solution for you: yummy popsicles made with just three ingredients in a few minutes. In this case, we used apricots, but you can make these popsicles with any fruit you want!
The recipe is very simple: cut the apricots in half, remove the pit, and place them in a saucepan with some sugar. Once the sugar has melted, add a few tablespoons of water and let it cook for another 10-15 minutes. Let it cool, then blend with an immersion blender to obtain an apricot puree. Add the yogurt to the puree and pour the mixture into silicone molds. Leave them in the freezer for three to four hours, and then they’re ready to enjoy as is, or you can decorate them with agave syrup and shredded coconut.
Very easy to make, they are a delicious idea perfect for eating fruit in the summer and also for children to enjoy. Plus, we can also enjoy them as a dessert. - 7 oz apricots (about 4)
- 1 cup cup plain yogurt (or Greek, soy, or coconut)
- 2 tbsp tbsp sweetener (sugar, erythritol, stevia, etc.)
- 2 tbsp tbsp agave syrup
- 2 tbsp tbsp shredded coconut

Steps to make Apricot and Yogurt Popsicles
To make apricot and yogurt popsicles, first wash the apricots, dry them, and cut them in half. Remove the inner pit.
Transfer them to a saucepan.
Add the sweetener or sugar and cook them over very low heat.Add 2 tablespoons of water and cook for about 15 minutes, stirring often until the mixture starts to boil. Remove from heat and let cool.
Use an immersion blender to blend everything into a smooth and homogeneous puree. Pour it into a bowl.
Add the yogurt and mix with a spatula to combine all the ingredients well.
Pour the prepared mixture into the appropriate popsicle molds with the wooden stick. Place the popsicles in the freezer for at least 3-4 hours.
Remove the popsicles from the molds and place them on a tray lined with parchment paper.
Drizzle each with some agave syrup or honey and sprinkle with shredded coconut. Your popsicles are ready to enjoy.

You can store the popsicles in the freezer for up to 2-3 months.
You can use any yogurt you prefer, such as plain or Greek yogurt. If you prefer a more intense fruit flavor, you can use apricot yogurt. For a vegan version, use soy or coconut yogurt, and for a lactose-free version, simply use lactose-free yogurt.
You can also use other types of fruit like peaches, strawberries, or raspberries, depending on the seasonality or your preferred flavors.
