Skillet Eggplant Parmesan
A tasty recipe, revisited and made in a lighter version. Instead of frying the eggplants, I grilled them, and instead of turning on the oven, I chose to cook the parmesan in a skillet! Parmesan is one of my favorite dishes, and since I prepare it very often, I choose to diversify it each time. If you like eggplants, try this recipe!

Ingredients for the skillet eggplant parmesan:
- 1 eggplant
- 1 mozzarella
- 17.6 oz tomato sauce
- parmesan
- salt
- extra virgin olive oil

Slice the eggplant and grill them. Once grilled, start assembling our parmesan. In a pan, place a layer of grilled eggplants,
Add some tomato sauce, salt, some mozzarella, some grated parmesan, and start over with the eggplants, continuing in the same way until you run out of ingredients.
Drizzle some oil on top, cover, and cook for about 30 minutes.
