Skillet Eggplant Parmesan

A tasty recipe, revisited and made in a lighter version. Instead of frying the eggplants, I grilled them, and instead of turning on the oven, I chose to cook the parmesan in a skillet! Parmesan is one of my favorite dishes, and since I prepare it very often, I choose to diversify it each time. If you like eggplants, try this recipe!

  • 1 eggplant
  • 1 mozzarella
  • 17.6 oz tomato sauce
  • parmesan
  • salt
  • extra virgin olive oil

Steps

The preparation of the skillet eggplant parmesan is very simple and quick, watch the video HERE.

  • Slice the eggplant and grill them. Once grilled, start assembling our parmesan. In a pan, place a layer of grilled eggplants,

  • Add some tomato sauce, salt, some mozzarella, some grated parmesan, and start over with the eggplants, continuing in the same way until you run out of ingredients.

  • Drizzle some oil on top, cover, and cook for about 30 minutes.

  • Enjoy your meal!
