Crostini with Sausage and Stracchino, tasty and easy to make, are perfect to serve as an appetizer for a family dinner or with friends, or as finger food at a buffet or for an aperitif.
Easy and quick, they are liked by practically everyone: adults and children.
The preparation is very simple: I sautéed the sausage in a pan together with the onion and, once cooled, added it to the stracchino. Then, I topped some bread slices and put them in the oven to brown. Delicious!!
Alternatively, you can also put the crumbled raw sausage together with the stracchino. This way, the crostini will need to stay in the oven a bit longer to cook, but the result will still be excellent.
I opted for the first method because I used a bit more sausage in the pan than I needed to prepare these gnocchi with sausage and stracciatella sauce (recipe coming soon on the blog). “Two birds with one stone” 😉
It’s also a great way to recycle bread.

Ingredients
- 1 loaf of bread
- 250 g sausage
- 250 g stracchino
- 3 tbsp extra virgin olive oil
- 1/2 onion
- to taste rosemary
- 1/2 cup white wine

- 1 Chopper
Steps
First, remove the skin from the sausage and crumble it by pressing with a fork; place it in a pan with 3 tbsp of extra virgin olive oil and 1/2 chopped onion and a few sprigs of rosemary, and sauté for a few minutes.
Then, add half a cup of white wine and let it evaporate. Once the sausage is cooked, place it on a plate, add the stracchino and mix well.
Preheat the oven to 392°F.
At this point, slice (about 0.6 inches thick) a loaf of white (or whole wheat) bread, place the slices on a baking tray covered with parchment paper and spread the filling, then drizzle with a bit of extra virgin olive oil
and bake in the already hot oven for about 5 minutes, or until the cheese has melted and formed a nice golden crust.
