Ingredients SINGLE DISH RECIPE with chicken eggplant and tomatoes

  • 1 eggplant
  • 1 tomato
  • 3 sun-dried tomatoes in oil
  • 1 mozzarella
  • 4 chicken breast (4 slices)
  • 1 oz oz raspadura
  • to taste basil
  • to taste dried oregano
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil

FOR THE PREPARATION OF THE SINGLE DISH RECIPE with chicken eggplant and tomatoes

  • Wash and cut into 4 not too thin slices the eggplant

    Then wash, remove the internal seeds of the tomato and chop it with the sun-dried tomatoes in oil making a coarse mix.

  • Chop the basil too and, after draining it from the preservation liquid, also the cow’s milk mozzarella with the raspadura.

    OK, I’m ready to compose this savory millefoglie of vegetables and chicken meat!

  • On the baking tray, put a slice of eggplant seasoning it with a pinch of salt, pepper, oregano, and a dash of extra virgin olive oil.

    Now bake at 392°F for about 6/7 minutes, then take out the tray and place on each eggplant slice the mix of fresh and dried tomatoes and then the slice of chicken and bake again for about 6/7 minutes.

  • After the time, take the tray out of the oven and put on each eggplant package the chopped mozzarella and raspadura and return to the oven to complete the cooking for a few more minutes, until the cheeses are nicely melted and stringy!

  • Let everything cool slightly, adjust the seasoning, and we’re ready to taste THE SINGLE DISH with chicken eggplant and tomatoes!
