They are nothing more than flaky shortcrust pastry baskets filled with custard and fresh fruit pieces. I made them for Father’s Day, and they disappeared in no time.

Very versatile, you can fill them with the creams and fruits you prefer.

Ingredients

  • 2 cups flour
  • 2/3 cup butter
  • 1/2 cup sugar
  • 40 g egg yolks (equivalent to about 2)
  • 1/2 teaspoon vanilla extract
  • 1/2 lemon (zest grated)
  • 1 cup whole milk
  • 1/3 cup sugar
  • 2 egg yolks
  • 1/4 cup flour
  • 1/2 pod vanilla
  • 1/2 lemon (whole zest)
  • as needed fresh fruit (strawberries, kiwi …)

Steps

  • First, take out the butter from the fridge at least half an hour before starting, then follow my recipe here to make the shortcrust pastry shells.

  • While the shells are baking in the oven, prepare the custard. Heat the milk in a saucepan. If you choose to flavor the cream with vanilla, add 1/2 stick of vanilla with the zest of the lemon and bring to a boil.

  • In a bowl, beat the egg yolks with the sugar until the mixture becomes white, dense, and foamy. Incorporate the sifted flour, spoon by spoon to avoid lumps. Slowly pour in the boiling milk (removing the vanilla and lemon zest), stirring constantly.

  • Pour the mixture into a saucepan and thicken over low heat for at least 3-4 minutes. Remove the pan from the heat. Pour the cream into a container and let it cool, stirring occasionally to prevent a film from forming on the surface.

    Tip: To prevent a film from forming on the surface during cooling, sprinkle with sugar while it is still hot.

  • Once the custard is cold, place it in a piping bag and fill the shells. Wash and dry the strawberries and cut them into pieces. Peel the kiwis, cut them, and place them together with the strawberries in the baskets.
