Orange and Chocolate Loaf Cake

The orange and chocolate loaf cake is a classic dessert perfect for breakfast but also as a snack, accompanied by a fragrant coffee or a good tea. It came about somewhat by chance because I realized halfway through the preparation that I only had semolina flour in the pantry. A good quality flour, but I mainly use it for making bread, pizza, or fettuccine.
What can I say, the result was fantastic, the loaf cake turned out delicious, very fragrant, thanks especially to the orange juice, and not heavy at all. In fact, it was so well-liked and appreciated by the whole family. So every time I make it, I only use semolina flour, and each time it receives many compliments.

Orange and Chocolate Loaf Cake Ingredients

  • 2 cups semolina flour
  • 3/4 cup sugar
  • 2 eggs
  • 1/3 cup unsweetened cocoa powder
  • Half cup orange juice
  • 2/5 cup vegetable oil
  • 2/5 cup milk
  • 1 packet baking powder

Preparation

  • In a bowl, beat the eggs with the sugar using an electric mixer until they become light and foamy. Then add the vegetable oil and orange juice. Next, add the sifted flour and baking powder and mix by hand without the electric mixer.

    Finally, add the milk slowly in a thin stream, continuing to mix by hand. When the batter is ready, divide it into two bowls.

    Or, we can put it in two pitchers, even those used for water. I saw this fantastic idea in a video recipe by Fatto in casa da Benedetta. Add the sifted cocoa to one, while leaving the other plain.

    Then, start pouring the two batters alternately into the previously greased and floured loaf pan.

    Finally, bake it for about 40 minutes at 340°F. Once baking is complete, remove it from the oven and let it cool well before serving.

Susy’s Advice

For those who are lactose intolerant, milk can be easily replaced with any plant-based drink like rice or soy beverage, or simply with water. Moreover, it is butter-free as I used vegetable oil instead.
