Today’s recipe is for a meat main course: beef tenderloin bites with potatoes.
Tenderloin is simply beef known for being very tender and flavorful because it comes from a young female animal that has never calved. This type of meat is easily found at the butcher counter of the supermarket.
Today we are using Limousine beef to make beef tenderloin bites with tomato potatoes, a recipe that reminds me of home almost as much as pasta and chickpeas. My dad loves these rustic and traditional dishes, and when I prepare and eat them, I always think of him.
A simple preparation to obtain, in the end, tender and tasty meat accompanied by melt-in-your-mouth potatoes all tied together by the perfect tomato sauce for a nice scoop with semolina bread or with a nice flaxseed and chia focaccia.
If you want to add another side dish, I recommend trying the fennel au gratin without béchamel, pan-fried cabbage and broccoli, or oven-roasted spiced pumpkin.

First of all, peel the potatoes, cut them into chunks about 1 inch (2-3 cm) in size, wash them, then put them in a pot with water and boil them for five to six minutes from when they start to boil. Meanwhile, take the meat and cut it into bites about 1 inch (2-3 cm) in size and place them on a plate.
Take the onion, remove the skin, and chop it coarsely. In a non-stick pan, place the olive oil with the onion and rosemary and sauté lightly. Now add the meat to the pan and sear it on all sides, then pour in the wine and let all the alcohol evaporate.
By this point, the boiled potatoes will be soft, drain them and add them to the pan with the meat, also add the tomato sauce, salt, and let cook over medium-low heat for about ten minutes. If you notice it dries out too much, add a little hot water.
When you add the potatoes, cover the pan with a lid to help keep it moist with the steam created.
