Light Puff Pastry Wrapped Shrimp

The light puff pastry wrapped shrimp are easy and quick finger foods to prepare.

To make my light puff pastry wrapped shrimp I used a fresh light puff pastry [30% less fat].
The light puff pastry [usually vegan, check the ingredient list] is crispy and light.

Ingredients

For this recipe, it is advisable to use 1 roll of rectangular base puff pastry.

  • shrimp
  • 1 roll puff pastry (fresh light 30% less fat)
  • sesame seeds
  • poppy seeds

  • 1 Baking sheet 10×11.5 inches
  • Parchment paper

Preparation

  • Clean the shrimp
    Gently separate the heads from the bodies.
    Do not throw away the heads, you can use them as a base for a possible broth with shrimp heads or shrimp sauce.

    Shell the shrimp.
    The first thing to do is to remove the black vein which is the intestine whose content is not toxic but can ruin our dishes:
    • with a sharp knife, make an incision on the back of the bodies;
    • extract the black vein or intestine with the help of a toothpick.

    Thoroughly wash the shrimp under running water and then let them drain in a colander.
    Pat the residual water with kitchen paper towels.
    They must be very dry.

  • Take the light puff pastry out from the fridge.
    Carefully unroll the sheet of puff pastry.
    Cut into strips about 0.8 inches wide.

    Line a baking sheet* with a sheet of parchment paper.
    *wide, the light puff pastry wrapped shrimp should not be overlapped.

    Wrap each shrimp with a strip of puff pastry starting from the tail, overlapping the strip in layers and without leaving spaces.
    If the strip of puff pastry ends, continue with a second strip of puff pastry.

    Place the light puff pastry wrapped shrimp on the baking sheet.
    If you like, sprinkle a handful of sesame seeds or poppy seeds over the shrimp [part or all] pressing lightly to make them adhere.

  • Briefly preheat the oven.
    Bake at 350°F in a convection oven for 15-20 minutes, depending on the desired level of browning.

    The phyllo pastry [made of flour and water, without added fats] is a valid light alternative to puff pastry.
    By overlapping the layers brushed with an emulsion of water and extra virgin olive oil [a drizzle] you get a crispy and tasty but light crust.
