  • 1.76 oz bacon (or speck, prosciutto, bacon)
  • 1 drizzle extra virgin olive oil
  • to taste fine salt (I do not add it)

  • To start, remove the outer, dry part of the radicchio root with a knife. Then, cut the radicchio in half or quarters and rinse it well.

  • Roll the slice of your preferred deli meat around the radicchio and place the radicchio and bacon bundles in a tray suitable for the air fryer.
    Spray oil over the radicchio leaves to help keep them from drying out.

  • Place a raised rack inside the air fryer.

  • Place the prepared dish on the rack. Close the fryer without waiting for preheating. Set the temperature to 302°F and the time to 4 minutes (I use the warming program to set the temperature and then adjust the time). For a more even cooking, turn the radicchio and bacon slices after 2 minutes. Do not cook for too long to prevent the leaves from becoming too dry.

    TRADITIONAL OVEN COOKING
    Bake at 356°F in a static oven for about 20 minutes, turning the radicchio slices halfway through cooking. If necessary, cover with aluminum foil.

  • VARIATIONS

    To prevent radicchio leaves from drying or burning, wrap them completely with deli meat.

    For a richer flavor, sprinkle the rolls with breadcrumbs and Parmesan before baking.

    For an even more flavorful dish, first wrap the radicchio with a thin slice of scamorza cheese and then with bacon.

  • Once cooked, serve hot or warm. If desired, drizzle with balsamic vinegar (or soy sauce) and sprinkle with walnut crumbs (or other nuts or seeds).

STORING radicchio with bacon

BEFORE COOKING it can be prepared and stored in the refrigerator, covered with plastic wrap, until time to cook.

AFTER COOKING, let it cool completely and store it in an airtight container in the fridge, where it will keep for up to 3 days. Then, before eating, reheat it in the microwave, oven, or on the stove for a few minutes.
