Great for those who want to celebrate New Year’s Eve at home but don’t want to overdo it since these are days of celebrations where you really eat a lot, at least with the chicken cotechino with lentils we pretend to eat light.

Ingredients for Chicken Cotechino with Lentils
- 14 oz chicken breast
- 1 sausage
- 1.8 oz bread (crustless, even fresh)
- 1 clove garlic
- 2 pinches salt
- to taste black pepper (ground)
- 1 sprig herbs (sage, rosemary, oregano)
- 7.75 oz dried lentils
- 1 onion (small)
- 1 carrot (small)
- 1 stalk celery
- 1 leaf bay leaf
- to taste salt
- 2 tablespoons tomato paste
- 2 tablespoons extra virgin olive oil

Preparation of Chicken Cotechino with Lentils
Rinse the lentils under running water, finely chop the onion, carrot, and celery and sauté them in a saucepan with the extra virgin olive oil.
When the onion becomes transparent add the lentils and the bay leaf, stir to let them absorb the flavors.
Add 2 cups (500 ml) of water or hot broth along with the tomato paste, bring to a boil then reduce the heat to low.
Cook for the time indicated on the package (between 25/30 minutes) ensuring it doesn’t dry out too much.
Meanwhile, as the lentils cook, prepare the chicken cotechino by placing the chopped chicken breast and sausage without the casing into the bowl of a food processor.
Blend briefly, add the bread cut into cubes, the garlic clove, spices, and season with salt and pepper.
Run the processor again briefly to combine everything.
Place the mixture on a sheet of parchment paper, wrap it like a candy pressing to compact while rolling.
Place the cotechino on a baking sheet and bake the chicken cotechino in a preheated static oven at 356°F (180°C) in the center rack for 20 minutes.
Remove from the oven, remove the parchment paper gently and let it rest for 10 minutes before slicing and serving it on a bed of lentils.
If you decide to cook the chicken cotechino in the microwave, use plastic wrap instead of parchment paper.
Wrap it tightly like a candy, place it on the microwave turntable plate, set it to 750W microwave function and cook for 5 to 7 minutes.
Let it rest without removing the plastic wrap for at least 5 minutes, so it continues to cook.
Then remove the plastic wrap, place it on the bed of lentils, and serve.
How to store Chicken Cotechino with Lentils
You can store it in the fridge for 2 days wrapped in parchment paper or plastic wrap and the lentils in an airtight container with a lid.
