Leek and Emmental Swirls are a tasty appetizer, super quick to prepare even at the last minute, and one bite leads to another. There are few ingredients, just have a roll of puff pastry, Emmental or another firm cheese like Provola and cubes of cooked ham, mortadella, or wurstel. Ingredients
- 1 roll puff pastry (rectangular)
- 3 leeks
- 2.5 oz Emmental cheese
- 3.5 oz cooked ham (diced)
- 1 egg
- 0.5 tsp fine salt
- 1 tbsp extra virgin olive oil

Steps
Slice the leeks into thin rings, let them soften in a small pan with a tablespoon of oil, salt them, and let them cool. Roll out the puff pastry leaving its paper underneath, make a layer with leeks and diced cooked ham.
Add the julienne grated Emmental cheese and close into a roll using the paper. Close the two ends and with a sharp knife cut slices about 3/4 inch thick. Place the slices on the baking tray covered with parchment paper, spaced apart. Beat the egg and brush it over the surface.
Bake in a preheated static oven at 392°F and cook for 30 minutes, until golden. They are excellent hot but also warm.
Advice
You can vary the ingredients as you like using spinach and diced mortadella or zucchini and ham.
