Scallops with Sweet and Sour Peppers

The SCALLOPS WITH SWEET AND SOUR PEPPERS is a tasty and colorful main dish, perfect to enrich your table with a touch of originality.

They are perfect for a different dinner than usual but easy and quick to prepare.

To make this delicious dish I used pork loin which is enriched by the sweet flavor of the peppers and the cooking with sugar and balsamic vinegar.

You can substitute the loin with chicken, veal, or turkey.

Ingredients

  • 1.1 lbs pork loin
  • 3 peppers
  • Half onion
  • 2 tbsps sugar
  • 4 tbsps balsamic vinegar
  • to taste salt
  • to taste extra virgin olive oil
  • to taste parsley
  • 3/4 cups flour

Tools

  • Skillet
  • Knife
  • Cutting Board
  • Wooden Spoon

Steps

  • Cut the loin into slices, flour them, and set aside.

  • Wash the peppers, remove the seeds and filaments, and cut them into pieces.

  • Heat the extra virgin olive oil in a large skillet, add the finely sliced onion, and let it brown.

  • Add the peppers, parsley, sugar, balsamic vinegar, adjust salt, and mix well with a wooden spoon.

    Cook for about 10 minutes.

  • Now take the floured slices, place them among the peppers, and cook for about 5 minutes.
