  • 3/4 cups sugar
  • 2 tbsps acacia honey
  • 2 tsp lemon juice

Steps

  • Pour the almonds into a pan and toast them over low heat, being careful not to burn them. Keep them warm. In another nonstick pan, put the sugar with the honey and lemon juice, which will prevent the sugar from crystallizing. Let it melt over low heat, and as soon as it becomes amber-colored, add the still warm almonds and mix for a few minutes until the temperature reaches 338°F.

  • Prepare a sheet of parchment paper in a tray, oil it (just rub it with an oiled hand) and pour the hot brittle over it (be very careful of burns), level it well by placing another sheet of parchment paper on top and rolling it with a rolling pin. Once the Almond Brittle is cold, you can cut it into bars with a knife.

Storage

The Almond Brittle should be stored wrapped in wax paper, placed inside a sealed container, and kept in a cool, dry place. Absolutely not in the refrigerator.
