Cake with White Chocolate Mousse

Ingredients for the cake with white chocolate mousse:
- 4 eggs
- 3/4 cup all-purpose flour
- 2/3 cup sugar
- 3 tbsps potato starch
- 2 tbsps unsweetened cocoa powder
- 9 oz white chocolate
- 7 oz heavy cream
- 14 oz whipping cream (Semi-whipped)
Steps

Base preparation:
Beat the eggs with the sugar until you get a light and creamy mixture. Add the flour, starch, cocoa and mix.
Put the mixture into the mold (14×14 in) lined with parchment paper. Level using a spatula. Bake at 392°F for about 10 min. Once ready, flip it over,
peel off the attached parchment paper and let it cool. Once cool, cut out two equal shapes.
Mousse preparation:
First, melt the chocolate with the heavy cream.
Add the semi-whipped cream little by little and mix.
Assembly:
Place the first piece of sponge cake, soak it with syrup flavored to taste. For a more precise result, you can use acetate sheets and adjustable molds. Add a layer of cream,
level it. Place the second piece of sponge cake, soak it, add another layer of cream
level it. Place in the fridge for a few hours.
After a few hours, remove the mold, clean the edge of the plate,
grate some white chocolate on top and decorate as desired.
