Notes and Tips
If kneading by hand, you can prepare the shortcrust using the classic sandblasting method, with cold butter. You can cut the cookies into any shape you like, round like ‘occhi di bue’, or round with a heart in the center.
You can also fill the cookies with your favorite jam or with Dark Chocolate Cream.
Preheat the oven in advance so you can bake the cookies while they are still cold; this way, they will better maintain their shape.
