The crunchy pumpkin pizza is a variation of the thin pizza with pumpkin flowers which I had also prepared gluten-free. It is a batter made of water, rice flour, and corn flour to which raw grated pumpkin is added. Nothing could be easier or faster. These flours, compared to wheat flour, make it particularly crunchy.

Ingredients
- 9 oz pumpkin (without skin)
- 3/4 cup gluten-free rice flour (or all-purpose flour)
- 3/4 cup gluten-free corn flour
- 1 1/4 cup water
- 3 1/2 tbsp extra virgin olive oil
- salt

- 1 Bowl
- 1 Baking tray
- 1 Whisk
- 1 Spatula
Steps
Grate the pumpkin with a wide-hole grater. Wash and dry the rosemary sprig. Remove the rosemary needles and chop them finely.
In a bowl, pour the flours with the salt and gradually add the water, stirring with a whisk to remove any lumps.
After forming a batter, add the pumpkin and mix again. Add half of the oil and blend.
Grease a round baking tray with a diameter of 12 inches. Pour the batter and spread it well with a spatula or spoon.
Oil with the remaining oil and flavor with the chopped rosemary. Bake in a preheated ventilated oven at 400°F for about 1 hour. Remove from the oven and serve immediately.

Any type of pumpkin can be used, from butternut to delica, but also the Hokkaido with its nutty flavor.
