Montblanc Birthday Cake in the Shape of a Number
A special birthday cake made for a friend of mine who loves Montblanc, so I wanted to recreate her favorite dessert and turn it into a magnificent cake in the shape of the number 40. I must say that when I first had the idea to make this cake, I was a bit skeptical about the outcome, but after some trials, I got a cake just the way I wanted it!! If you like chestnuts, meringues, and cream, you absolutely must try this cake!

Ingredients for the Montblanc Birthday Cake in the Shape of a Number:
- 5.5 oz egg whites
- 5.5 oz powdered sugar
- 5.5 oz granulated sugar
- 1.3 lbs marron glacés
- sugar syrup (Water and sugar)
- 1.8 cups whipped cream
Steps

Meringue preparation:
Start by whipping the egg whites and gradually add the granulated sugar. You should obtain a firm and glossy mixture. Finally, add the sifted powdered sugar gradually.
Gently fold the mixture. Place the drawn number template under the parchment paper and fix it. Draw over the template using a pastry bag with a plain tip.
Smooth out with a spatula if needed. Bake at 194°F for about 2 hours. Repeat the same process with the second template.
Cream preparation:
Blend the marron glacés and add a bit of sugar syrup.
Place the obtained cream in a cookie syringe or a potato ricer.
Assembly:
Place the first meringue template, cover it with a layer of whipped cream. Add some marron glacés and a bit of the prepared cream.
Place the second templates, cover them with a layer of whipped cream. Also cover the edges with cream.
Put the chestnut cream on top. Dust with powdered sugar.
