- Difficulty: Very easy
- Cost: Cheap
- Preparation time: 15 Minutes
- Portions: 12
- Cooking methods: Oven
- Cuisine: Italian
Ingredients
- 2 Eggs
- 10 tbsp Butter
- 1 cup Sugar
- 3 cups Flour
- 1 cup Milk
- 1 pinch Salt
- 1 packet Baking powder
- 1 Lemon zest
- 1 Vanilla pod (seeds)
Tools
- Pan for 12 muffins
- 12 Baking cups for muffins
- 2 Bowls
- Whisk
Preparation
In a tall bowl, (I used a glass jug), I put all the liquid ingredients, milk, the two eggs, melted butter, and mix with a whisk.
In another bowl, I put the dry ingredients, flour, sugar, baking powder, a pinch of salt, the zest of a lemon and the seeds or extract of vanilla and mix well.
I start adding the liquid ingredients little by little to the dry ones, mixing well to avoid lumps, until obtaining a smooth and homogeneous mixture
Then I pour the batter into the baking cups placed in the muffin pan and bake in a preheated oven at 350°F for 35 minutes
Once cooked, I take the American Muffins out of the oven, let them cool slightly before enjoying them, and dust them with powdered sugar.
Storage and Tips
To have soft and light muffins, you should work the batter as little as possible and use a wooden spoon or a pastry spatula. Additionally, they can be stored for up to 3 days at room temperature under a glass dome or in a well-sealed tin box so they remain soft and fragrant. Alternatively, they can be frozen; once cooled to room temperature, place them in a plastic food bag and put them in the freezer for up to 4 months. Thus, when you decide to eat them, just take them out of the freezer a few hours in advance, let them thaw, and enjoy them within 24 hours.😋
