Sweet ravioli with ricotta and cream
Delicious fried pastries filled with a ricotta cream. Sweet ravioli belong to the category of carnival sweets, but I personally like to eat them anytime, so I occasionally prepare them even outside of the most appropriate period, Carnival.

Ingredients for sweet ravioli with ricotta and cream:
- 1 1/2 cups flour
- 3 egg yolks
- 1 1/2 tbsp sugar
- 1 1/2 egg whites
- 2 tbsps Marsala
- 1 1/2 tbsp butter
- 1 tsp baking powder
- lemon zest
- 1 cup ricotta
- 1/3 cup sugar
- 3/5 cup custard
- Strega liqueur
- vanilla
Steps

Dough preparation:
We put the flour, sugar, baking powder, a little lemon zest, the egg yolks, the Marsala.
We add the butter, the egg white and knead for a few minutes. Wrap in cling film and put in the fridge for about 30 min.
Filling preparation:
In a bowl, we put the ricotta, the custard,
We add a bit of liqueur and mix. Add the sugar, a bit of vanilla, and mix well.
We roll out a part of the dough and cut circles. Place one circle at a time on the mold, put a teaspoon of filling
close by pressing well. Open and remove any excess dough. Continue with all in the same way. Fry them in hot oil for a few minutes. Dust with powdered sugar!
