The BELL PEPPER OMELETTE is a tasty, simple, and very inviting main course.
It has a very colorful appearance and is a great fridge-cleaner.
You can serve it with fresh salad or use it to fill sandwiches, wraps, or even better, cut into cubes to enjoy as an appetizer with friends.

Ingredients
- 5 eggs
- 2.8 oz grated Parmesan cheese
- as needed dried parsley
- as needed extra virgin olive oil
- 1 red bell pepper
- as needed salt

Steps
Wash the peppers well, dry them, and with the help of a knife and a cutting board, remove the top, seeds, and white filaments. Then, cut them into cubes or strips.
Take a pan and heat a drizzle of extra virgin olive oil.
Add the peppers, a sprinkle of dried parsley, salt, mix, and cook for about 10 minutes.
Meanwhile, break the eggs into a bowl, add the grated Parmesan cheese and parsley, salt, and mix vigorously with a fork or a whisk.
Pour the obtained mixture into the pan with the cooked peppers, cover with a lid, and cook on low heat for about 5 minutes.
Flip the omelette with the help of a plate or a turner pan and continue cooking for another 5 minutes.

Store in the fridge covered with aluminum foil.
