An economical dish, juicy, good hot and cold, which we could also use to top bruschetta, add to a focaccia and make it the main course of the day, with a drizzle of oil and a generous sprinkle of grated Parmesan.

It’s a side dish to make with small tomatoes like plum or cherry tomatoes, which in this season are at their peak in terms of aroma and intensity.

Ingredients for GRILLED CHERRY TOMATOES WITH LEMON AND HERBS

  • 28 oz cherry tomatoes
  • 1/2 lemon (untreated)
  • 1/2 teaspoon sugar
  • 1/2 clove garlic (minced)
  • to taste chopped parsley
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

PREPARATION FOR GRILLED CHERRY TOMATOES WITH LEMON AND HERBS

  • Wash and dry the cherry tomatoes , then cut them in half lengthwise.

    Salt them and place them cut side down on sheets of kitchen paper to remove the excess liquid.

  • Squeeze the lemon, filter the juice, and mix it with the sugar, stirring well. After the cherry tomatoes have rested, drizzle them with this mix.

    Heat the grill (or the oven), lightly oil each cherry tomato, and cook them for 4/5 minutes per side, placing them on the serving tray as they are cooked.

  • For the dressing place the zest of the untreated lemon, finely chopped garlic, EVOO, salt, and pepper in a sealed jar.

    Shake the tightly closed jar and use this vinaigrette to season the cherry tomatoes. Cover them and let them marinate for about 30 minutes so they absorb the flavors and are delicious!
