Steps for Preparing Chickpea Cream with Cod Bites
Start preparing the chickpea cream with cod bites by pouring oil into a high-sided casserole and adding sliced onion, crushed garlic clove, and rosemary. Sauté for a few minutes.
Peel the potatoes, dice them, and add to the casserole, letting them season for two minutes.
Cover with water and cook for about 10 minutes until tender.
Then add the chickpeas and cook for another 5 minutes to allow the flavors to blend. Turn off the heat and season with salt.
Blend with an immersion mixer until a smooth, lump-free cream is obtained.
Prepare the cod bites by first patting the fillets dry with paper towels and salting them. Cut each fillet into bites.
Pour the breadcrumbs into a plate and add some of the seeds, mixing well. Coat the fish bites in the breadcrumbs ensuring they stick well.
Pour oil into a non-stick pan and cook the cod bites on high heat until they are golden on all sides.
Pour the chickpea cream into each plate and top with the cod bites. Finish with the remaining mixed seeds and a drizzle of olive oil. Serve the Chickpea Cream with Cod Bites hot.
