Orange and Lemon Jam with Ginger and Vanilla
A fragrant jam made at home with organic, untreated fruit at zero miles in my case because it was given to me by friends who have trees in their garden! I chose to mix oranges and lemons and add ginger and vanilla for an even more intense and fragrant flavor. A simple recipe that we can use for our sweet recipes of all kinds or consume it as is on bread or to accompany cheeses!

Ingredients for Orange and Lemon Jam with Ginger and Vanilla:
- 1.5 lbs oranges (Untreated on the surface)
- 1.5 lbs lemons (Untreated on the surface)
- 3 cups sugar
- vanilla
- ginger powder
- baking soda
Steps

Wash the lemons and oranges thoroughly with water and baking soda using the rough side of a new sponge. Remove the thinnest possible peel (avoiding the white part) and set it aside. Clean the fruit, removing as much white part as possible. Cut it into pieces and remove the seeds.
Blanch the peels for a few minutes then remove them and change the water. Repeat this process 3 times.
Then drain them and chop them finely. In a pan put the chopped fruit, sugar, chopped peels and cook for about 45 min.
Remove the foam that forms during cooking. Add ginger and vanilla to taste. Stir occasionally.
Once the desired density is reached, put it immediately into previously sterilized jars. Close them well and turn them upside down to create a vacuum seal. If you want to preserve the jam longer, boil the jars for about 20 min.
