Ingredients for the preparation of the pumpkin roll:

pan 14 inches x 14 inches

  • 4 egg whites
  • 4 egg yolks
  • 4 tablespoons water (Hot)
  • 2/3 cup flour
  • 1/3 cup vegetable oil
  • 3 1/2 oz pumpkin
  • vanilla
  • 14 oz pumpkin (Cooked)
  • 1/3 cup sugar
  • ground cinnamon

Mash the cooked and cooled pumpkin with a fork, add the sugar and cinnamon, then mix.

Assembly:

Unroll the cold roll and spread the prepared filling on top, spread it and level it. Roll it up and put it in the fridge for a few hours, then cut it into slices and decorate as you like.

  • Base preparation:

    First, separate the egg whites from the yolks. Begin to beat the egg whites to stiff peaks with sugar. Add a pinch of salt, hot water to the yolks, and beat. Add the oil,

  • Add a bit of vanilla flavoring, the flour, and mix well. Gently fold in the beaten egg whites. Grate the pumpkin directly onto the baking tray lined with parchment paper, then spread it out.

  • Place the obtained mixture on top, spread it out, and level it. Bake at 356°F for about 20 min. Once the base is cooked, cover it with another sheet of parchment paper and flip it over.

  • Peel off the paper stuck during baking and roll up the base. Let it cool.
