You can also make the recipe with other parts of the chicken, like legs.
You can use the aromatic herbs you prefer, sage and mint are great.
If you want to leave the skin on, I suggest browning the meat (skin-side down) in a pan or on a griddle before putting it in the oven. This way the skin will be crispier and less greasy.
