The original pasta alla burina is a traditional Roman recipe rich in ingredients and very tasty!
I’ve read recipes for pasta alla burina that even exclude tomatoes, but personally I added not only fresh tomatoes but also a bit of very creamy tomato puree that was left over from a previous preparation!
IF YOU WANT to make the original recipe of pasta alla burina exclude the puree and add 400 GRAMS OF FRESH ROMA TOMATOES!!!!!!
The PASTA ALLA BURINA is a hearty rustic dish for the Sunday family lunch!
Clearly this sauce cannot be defined as ‘burino’ in the sense of simple or low-status, but simply a genuine rustic dish that is very good!
There are many different versions of the recipe for pasta alla burina because artichokes, sautéed mushrooms, ricotta, pancetta are added, and pasta such as tagliatelle, penne rigate, and who knows what else!!!!!!!!!!

Ingredients PASTA ALLA BURINA RECIPE
- 11.3 oz gramigna (but also fine with other short or long pasta!)
- 1/2 onion (I have the red one during this period!)
- 7.1 oz cherry tomatoes (Roma)
- 2.8 oz peas, canned, drained
- 1/2 cup tomato puree
- 10.6 oz sausage
- 1/2 cup dry white wine
- as needed extra virgin olive oil
- as needed salt
- as needed pecorino (grated)

FOR THE PREPARATION OF THE PASTA ALLA BURINA RECIPE
Then I add the sausage crumbling it with my fingers and let it brown while stirring for 3/4 minutes.
I pour in the wine and let it evaporate completely, then add the cherry tomatoes and let it cook for 4/5 minutes.
I also pour in the tomato puree and adjust the salt and pepper.
I cover with the lid and leave it on the fire for another 3/4 minutes.
In a high-sided saucepan, I put salted water and when it boils, I pour in the selected pasta cooking it according to what is indicated on the package.
I drain the pasta and pour it directly into the pan with the sauce tossing it and stirring carefully to mix all the ingredients well.
All that remains is to prepare the individual portions for my guests and add a pinch of parsley and some parmesan cheese!
