I don’t know about you, but I love soups of all kinds, like this one: Chickpea Soup. Now is the perfect time to prepare it, as the temperature is dropping, even though in my area it’s still pleasant especially during the day. It’s only when the sun sets that it cools down a bit, and since the heating hasn’t been turned on yet, a warm soup is just what you need. The recipe I’m suggesting is simple to make and the result will be perfect. I used dried chickpeas that I soaked the night before, but if you don’t have time, you can use pre-cooked ones and follow the same recipe, reducing the amount of broth and cooking time. I assure you, you will love it.

Ingredients for Chickpea Soup
- 10.5 oz dried chickpeas
- 1 stalk celery
- 1/2 white onion
- 3.5 tbsp extra virgin olive oil
- 1 sprig rosemary
- to taste pepper
- 8.5 cups vegetable broth
- 1/2 teaspoon baking soda
Steps for Chickpea Soup
First, pour the chickpeas into a bowl and cover them with water, add the baking soda and let them soak overnight (about 12 hours). After the time has passed, drain them, rinse them again and remove the skin by rubbing them between your palms.
Finely chop the onion, also cut the celery, and place everything in a large pot with the extra virgin olive oil and let it sauté slightly, then add the chickpeas, stir with a wooden spoon, add a sprig of rosemary, and cover with vegetable broth. If you don’t have broth, use water with a bouillon cube. (To prevent the rosemary leaves from detaching, tie a thread around the sprig and close with a knot, or you can take a gauze to close with thread the leaves like a small bag.)
Once it starts boiling, let them cook for about two hours on low heat, stirring occasionally. If needed, add more broth.
At the end of cooking, remove the rosemary, serve it at the table accompanied by toasted bread cubes. If you like, add freshly ground pepper to each portion. To make it even more substantial, you can add spelt, barley, or simple pasta.
