Today I propose a super tasty, super elegant recipe that is easy to prepare: Cod in foil in an air fryer.

If you don’t have an air fryer, oven baking works just as well.

The fish cooked in foil in the air fryer is a light and tasty alternative to classic frying. Using just a drizzle of oil, you get a delicate and flavorful dish, perfect for those who want to enjoy fish without sacrificing taste.

Moreover, it is a very easy recipe to quickly cook cod fillets, while also being line-conscious.

Cod, as we all know by now, is rich in omega-3s which are very good for our body, especially for those with high cholesterol. Ideally, it should be included in the diet at least once a week.


Essentially, it’s fish in foil, but since the cod is sliced (or filleted), it is even easier and quicker to prepare and eat as it doesn’t need cleaning, being already filleted.

The cooking takes place in a humid environment, in the fryer, to maintain flavor and tenderness. But don’t worry if you don’t have an air fryer; the foil cooks in the electric oven with the same procedure but different baking times, namely 30/35 minutes at 350°F.


Best served immediately, opening the foil at the table and adding a drizzle of raw oil. For better tenderness of the fish, wait 5 minutes after removing them from the oven before enjoying.

Ingredients for Cod in foil in air fryer

  • 14 oz cod (fillets)
  • 6 piccadilly tomatoes
  • 1 clove garlic
  • to taste extra virgin olive oil
  • to taste parsley
  • salt
  • pepper
  • capers (optional)

Tools

  • Air fryers
  • Parchment paper
  • Pitter

Steps for Cod in foil in air fryer

  • Chop the garlic and cherry tomatoes.
    Cut the cod fillets to size.

    Pit the olives and slice them into rings.

  • Place the cod on parchment paper and add cherry tomatoes, garlic, olives, and capers.
    Form the foil packets by twisting the ends with kitchen paper.

    Add extra virgin olive oil.
    Transfer to the air fryer and cook for 12-13 minutes at 392°F.

    After the first 12-13 minutes, open the foil and cook for another 6 minutes at 356°F.

    The times may vary from air fryer to air fryer and depending on the size of the fish pieces.

    Check.

  • Remove from the oven, transfer to plates, and add chopped parsley.
