Ingredients
- 1 3/4 cups all-purpose flour
- 1 egg
- 7 tbsps butter
- 1/3 cup sugar
- 3 tbsps unsweetened cocoa powder
- 2 egg yolks
- 1 cup whipping cream
- 4 tbsps sugar
- 4 tbsps all-purpose flour
- 1 3/4 oz 50% dark chocolate
Steps
Pour the flour with the sugar, a pinch of salt, and the cocoa in a bowl, add the egg, butter, and work the ingredients well.
Work the egg yolks with the sugar in a saucepan with a whisk, add the flour and mix with the whisk then add the cream a little at a time and mix well.
Move to the stovetop, add the chocolate, and stir constantly with the whisk until it thickens.
Roll out the pastry into a 9-inch pan lined with parchment paper and keep a little dough aside.
Pour the chocolate into the shell then roll out the other pastry and make the covering strips.
Bake and cook at 355°F for about 30 minutes.
Dust with powdered sugar, let cool before slicing.
