Air Fryer Apple Cake

This air fryer apple cake recipe is made without yogurt, with little sugar and only 2 eggs, for a lighter and more genuine result. To keep the batter soft yet light, I chose ricotta cheese as the base ingredient. Furthermore, I preferred type 1 flour, which adds a rustic touch and a slightly whole grain texture. The 8.5-inch diameter and 2.4-inch height pan, the same that I use for mini cakes in the traditional oven, is perfect for keeping the cake soft without the surface drying out. The result was surprising, with quick baking time, perfect texture, and a flavor appreciated by the whole family! An easy, fluffy, and quick cake.

  • 2 eggs (medium at room temperature)
  • 1/3 cup sugar (white or brown or coconut sugar)
  • 1/4 cup rice oil (or peanut oil – alternatively 1/4 cup melted clarified butter)
  • 1 1/3 cups type 1 flour (or whole wheat)
  • Half packet baking powder (about 8 g)
  • 1/2 cup ricotta cheese (or 80 g of Greek yogurt, cooking cream or mascarpone, alternatively 1/4 cup of milk)

In the classic air fryer basket, usually, a pan larger than 8 inches in diameter and with a maximum height of 2.8 inches won’t fit. Also, once the pan is filled, there must always be a space of 0.6 inches between the batter and the edge of the pan.

If using a too low pan, it is better to reduce the amount of batter to prevent the cake from drying out too much on the surface. With the leftover batter, you can make muffins, also cooked in the air fryer.

  • Peel the apples, cut them into thin slices, and decorate the surface of the cake by arranging them in a circular pattern, as shown in the photo.

  • Insert the cake pan into the air fryer basket and, without preheating, set the cake program at 320°F for a cooking time of 25 minutes. After this time, when a golden surface has formed on the cake, check its doneness by inserting a toothpick. If the mini cake is too browned or at risk of burning, lower the temperature to 300°F and continue cooking for another 5 minutes or more. Keep in mind that cooking times may vary depending on the air fryer model.

  • Remove from fryer and let cool in the pan for a few minutes.
    Finally, turn out onto a cooling rack and, if desired, dust with powdered sugar and/or cinnamon.

    TRADITIONAL OVEN BAKING
    Bake in a pre-heated static oven at 350°F for about 50 minutes, adjusting based on your oven. Once baked, turn off the oven and leave it inside for another 10 minutes.

To store the apple cake prepared in the air fryer, let it cool completely, then place it in an airtight container. It stays soft at room temperature for 2 days. To keep it longer, you can put it in the fridge, where it will last up to 4 days.
