Air Fryer Roasted Peppers

I cooked my air fryer roasted peppers, quick and just as good as roasted peppers on the grill.

A great versatile side dish also as a sauce and seasoning for:
• bruschetta and croutons;
• pasta, pasta salad, and rice salad;
• dishes based on meat or fish, cheeses, eggs, or legumes.

We consume the fruit of the peppers.
Green peppers are less ripe, therefore less sweet, but they may cause digestive problems.
Yellow and orange peppers are ripe peppers.
Red peppers are fully ripe, thus sweeter [with a higher carbohydrate and sugar content compared to green peppers].
Having digestive problems, I choose peppers with a square shape or, as an alternative, elongated ones called bull’s horn or cornetto of red or yellow color, mature and with sweet flesh.

Peppers are among the vegetables that in case of hyperglycemia, prediabetes, and type 2 diabetes could [conditional] cause an increase in blood sugar levels, so they should be consumed in moderate amounts and it’s advisable to monitor glycemic response.

In the Accu-Check diet meter you will find the CHO count per serving:
• 300 g serving of raw weight roasted peppers [150 g cooked] → CHO 20.1.

Ingredients

  • square or horn peppers (red or yellow, mature and with sweet flesh)
  • 1 pinch salt
  • 1 pinch mixed peppercorns (with grinder)
  • to taste lemon juice
  • 1 drizzle extra virgin olive oil (raw)
  • to taste basil (chopped)

Tools

  • Air fryer
  • 1 Plastic freezer bag

Preparation

  • Wash the peppers thoroughly.

  • Follow the instructions [temperature and time] indicated in your appliance manual.

    Procedure with my Ariete Air Fryer – Friggi Sano [Eurospin]:
    • set the temperature to 392°F (200°C) and preheat for 5 minutes;
    • remove the basket and place the peppers on the grill accessory;
    • cook for 10 minutes;
    • remove the basket and turn the peppers;
    • cook for another 10 minutes;
    • remove the basket and check the doneness of the peppers.

    Your air fryer roasted peppers are ready.

  • To easily and quickly peel the roasted peppers, close the still-warm roasted peppers inside a freezer bag for 5 minutes.

    Afterward, it will be very easy to peel them.

  • Once peeled: remove the stem, open the peppers, and remove the seeds.

  • Cut the roasted peppers into more or less wide or thin strips according to taste.
    Transfer the roasted peppers into a bowl and season with:
    • a pinch of salt;
    • a pinch of pepper;
    • plenty of lemon juice;
    • a drizzle of oil;
    • basil.

  • already done:
    • remove the skin;
    • remove the seeds;
    • drizzle them with plenty of lemon juice [grandmother’s tip].
