Ingredients for Pan-Fried Croaker Steaks
- croaker (4 steaks)
- 14 oz cherry tomatoes
- 3.5 oz black olives
- 1 onion (small)
- 1.7 fl oz white wine
- salt
- wild fennel
- 2 tbsps extra virgin olive oil
Steps for Pan-Fried Croaker Steaks
The simplest thing is to have your fishmonger cut the croaker into steaks, after deboning it, so everything will be simpler and faster. First, finely chop the onion and cut the cherry tomatoes in half.
In a large pan, add a drizzle of oil and the onion, let it soften slightly then add the halved cherry tomatoes and some leaves of wild fennel. Lightly salt and let cook for a few minutes.
When the cherry tomatoes are soft, deglaze with white wine, add a little water and continue cooking for another 10 minutes.
When the tomatoes have wilted, add the croaker steaks and olives to the sauce. If the sauce is too dry, add a little water. Use a spoon to scoop some sauce and pour it over each steak. Cover with a lid and let cook for another 10 minutes.
