Ingredients
- 1.4 cups all-purpose flour
- 0.7 cups sugar
- 3 eggs
- 3.5 tbsp whole milk
- 0.4 cups sunflower seed oil
- 1 packet baking powder
- Half teaspoon vanilla extract
- 2 egg yolks
- 0.3 cups granulated sugar
- 1 1/4 cups milk
- 0.25 cups all-purpose flour
- 1 pod vanilla
- 1 lemon (only the zest)

Soft Cake with Custard Preparation
In a small saucepan, bring milk to a boil with the vanilla pod and lemon zest.
Meanwhile, in a bowl, work the egg yolks with the sugar with a hand whisk until you obtain a frothy mixture.
Add the sifted flour and mix well.
When the milk has reached a boil, remove the vanilla pod and lemon zest, then pour it in a stream over the egg yolk and sugar mixture.
Stir constantly with the whisk to avoid lumps.
Transfer the mixture to the saucepan and cook the custard over low heat, stirring constantly, until it thickens.
Remove from heat and cover with cling film in contact to prevent a skin from forming. Let it cool completely.
In a bowl, whip with electric whisks the eggs with the sugar until you obtain a frothy and light mixture.
Add the oil, milk, and vanilla extract, mixing gently.
Sift the flour and baking powder and incorporate into the mixture using a silicone spatula, mixing gently from bottom to top to avoid deflating the mixture.
Grease and flour or cover with parchment paper a 7-inch mold and pour the mixture inside.
With a spoon or a pastry bag, pour the custard on top, forming lines.
Preheat the air fryer to the temperature indicated by the manufacturer for desserts (usually around 302°F).
Insert the mold into the air fryer and cook for 20 minutes, checking doneness with a toothpick.
Once cooked, remove the cake from the air fryer and let it cool completely before removing it from the mold.
Decorate with powdered sugar on top.
Tips and Variations
Select a mold suitable for the air fryer and line it well with parchment paper to prevent the cake from sticking.
The cooking in the air fryer is faster than the traditional oven, so I recommend checking the cooking often to prevent the cake from drying out too much.
If you prefer a lighter cream, you can replace part of the milk with fresh cream.

Of course, if you don’t have an air fryer, you can bake the cake in the traditional oven at 356°F for at least 40/45 minutes in the central rack.
