Fresh tagliatelle can be stored excellently for several months if left to dry at room temperature, covered by a net or a cloth.
So that they do not get dusty, or perhaps some insect could land on them.
They can be stored in the fridge for a few days or even for a few months in the freezer.
I usually store them, once rolled into bird’s nest shapes and dried, in an airtight glass container.
