Fake coffee diplomats
Quick little desserts, very simple to prepare and they do not require cooking! It may seem strange, but for this sweet recipe, I used unsalted crackers as the base, which we usually use for savory recipes, the result…AMAZING!!! I made excellent little desserts to enjoy as a dessert after a meal, as a snack, afternoon treat, or whenever we crave something delicious! I called them “fake diplomats” because I followed the diplomatic procedure, but instead of puff pastry, I used crackers, and instead of custard, I made a coffee cream, and instead of soaking the ladyfingers in alchermes, I soaked them in coffee! They are perfect for parties too!

Ingredients for fake coffee diplomats:
- 4.4 oz mascarpone
- 1 cup heavy cream
- 3 tbsp instant coffee
- 0.5 cup sugar
- as needed cracker (Unsalted on top)

Steps
The preparation of fake coffee diplomats is very simple and quick and does not require cooking, watch the video HERE.
First, let’s prepare the cream. Put the cream, instant coffee, mascarpone, sugar and whip until you get a thick and homogeneous cream.
Place a layer of crackers on a plate to form the base. Add a layer of cream and spread it gently with a spatula. Dip the ladyfingers in the coffee.
Place them in a row on top. Add another layer of cream, spread and level it. Cover with another layer of crackers.
Refrigerate for a few hours, then trim the edges and cut into pieces following the lines of the crackers. Place the pieces on paper cups.
