Today’s recipe is a vegetable casserole, the potatoes “a sfincione” are a flavorful mille-feuille of vegetables easy to make and can be a main dish perhaps with 2 hard-boiled eggs or a tasty and easy side dish for meat and/or fish dishes.

“A sfincione” is so-called because the potatoes replace the leavened dough of the classic Sicilian sfincione, a super soft and flavorful rustic dish!

The sfincione in the Palermo style is a kind of soft focaccia that is topped with a generous amount of tomato and onion sauce, sliced caciocavallo, and oregano, and its flavor is amplified by adding some anchovies.

Why is it called sfincione? The term derives from the Arabic root “sfincia” to indicate a soft and airy dessert typical of Arabic cuisine. The characteristic of this delicious food is precisely the high and soft dough, a characteristic that differentiates it from simple pizza.

Ingredients RECIPE POTATOES “A SFINCIONE” flavorful mille-feuille of vegetables

  • 2.2 lbs potatoes (medium-large, to slice)
  • 1 onion (large, I used red ones)
  • 9 oz tomatoes (red, firm, ripe)
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper

Steps POTATOES “A SFINCIONE” flavorful mille-feuille of vegetables

  • cool or better at room temperature because when hot it doesn’t give its best, so prepare it in the morning and after a certain period out of the fridge bring it to the table and … there will be an applause of appreciation!

  • Anyway … I wash and peel the potatoes, then slice them rather thinly.

    I peel the onion and slice it thinly as well.

    Same with the tomatoes, which should be large, not cherry or date tomatoes!

  • I preheat the oven to 340°F and start making the mille-feuille of potatoes, onion, and tomatoes.

    I lightly oil the baking tray and make a first layer of potatoes, add the onions and tomatoes and season with a pinch of dried oregano, salt, and pepper to the layers of potatoes “a sfincione”.

  • I continue layering the vegetables as above and finish with tomatoes, seasoning with salt, pepper, and the dry spice.

    I bake and let it cook for about 50/60 minutes or according to your home oven.

    I let it cool (for me, heavily warm) and then serve the dish of potatoes “a sfincione” at the table!
