The rustic cherry tomato sauce is a naturally sweet fresh tomato sauce prepared without added sugar and without using oil during cooking suitable for hyperglycemia, prediabetes, and type 2 diabetes.

For the preparation of my fresh tomato sauce I used ripe cherry tomatoes.
You can obtain:
• a rustic cherry tomato sauce;
• a cherry tomato puree;
according to taste and need.
Season with fresh basil leaves for a fresh basil tomato sauce and a pinch of pepper.

Versatile:
• pasta sauce;
• pizza topping;
• base for preparing vegetable, meat, and fish sauces and ragouts, legumes;
• ingredient to color and flavor: just add a few tablespoons, instead of tomato paste, for a more digestible and lighter result.

Add a drizzle of raw oil at the end of preparation.

Rustic Cherry Tomato Sauce

Ingredients

For about 1 3/4 cups of rustic tomato sauce or about 3/4 cup of tomato puree.

  • 1.1 lbs cherry tomatoes (ripe)
  • 1 pinch garlic powder
  • 1 pinch salt
  • as needed basil (in leaves)
  • 1 pinch mixed peppercorn (with grinder)
  • 1 drizzle extra virgin olive oil (raw)

Tools

  • 1 Pan
  • Food Processor or Mixer
  • Sieve

Preparation

  • Select the ripest berries.
    Wash the tomatoes thoroughly.
    Cut and remove the stem part if you find it necessary.
    Vertically cut each berry in half.

  • In a hot pan or wok, brown a sprinkle of garlic powder.
    Add the tomatoes and brown for about 2 minutes over high heat, stirring repeatedly so they moisten with their own juice.
    Add a pinch of salt.
    Continue cooking, stirring repeatedly until the tomatoes are wilted and the water has evaporated.
    Cherry tomatoes do not release much water so it will only take a few minutes: 5 or slightly more until the desired consistency.

  • When the tomatoes are warm:
    • pour into the mixer and blend.
    You will get a thick sauce [and without waste].

  • When the tomatoes are warm:
    • pour into the mixer and blend;
    • pass the blended tomatoes through a sieve with a spoon.
    You will get a liquid and velvety sauce without seeds.

  • Your rustic or pureed cherry tomato sauce is ready: without added sugar and without using oil during cooking.

  • Variant
    yellow cherry tomato sauce;
    the yellow cherry tomato is a typical Sicilian tomato produced in Scicli.

  • Store the sauce:
    • in the fridge, if you plan to consume it the same day or within a few days;
    • in the freezer, to be taken out and transferred to the fridge the night before using it.
