The light cold pasta with chicken is a light cold pasta salad with chicken.
For your pasta salad with chicken you can use breast, chop, or thigh of:
• grilled or pan-seared chicken,
• roasted chicken;
• oven-baked or air-fried chicken;
• boiled chicken;
even leftovers, turning it into a recycling recipe.
I used the breast of a rotisserie chicken.
The cold pasta with chicken is a one-dish meal as it combines the characteristics of a balanced meal into a single course.

Ingredients
- 1 cup whole wheat penne
- 10 oz chicken (breast, chop, or thigh)
- 1 pinch salt
- 1 pinch mixed peppercorns (with grinder)
- 1 drizzle extra virgin olive oil (raw)
- as needed lemon juice
- as needed salted capers
- 12 green olives in brine (pitted)
- as needed cherry tomatoes
- as needed oregano
- as needed basil

Preparation
For your pasta salad with chicken you can use breast, chop, or thigh of:
• grilled or pan-seared chicken,
• roasted chicken;
• oven-baked or air-fried chicken;
• boiled chicken;

Cut the chicken into pieces or shred it.
If you cooked the chicken specifically for the pasta salad remember to season it with:
• a pinch of salt;
• a pinch of pepper;
• herbs;
• roast spices.Cook the pasta, rinse it well under running water so it cools down, and let it drain thoroughly.
Place the pasta in a large bowl or salad bowl.
Grind the pepper.
Drizzle with a little raw olive oil and lemon juice in about the same amount and mix.Add the chicken pieces or shredded chicken and mix.
Rinse and squeeze a handful of capers and chop them finely with a knife.
Drain and rinse the olives.
Thoroughly wash the tomatoes.
Cut and remove the stem if you find it appropriate.
Cut each berry vertically dividing it in half or into four wedges.Add to the pasta:
• capers;
• olives;
• cherry tomatoes;
• oregano;
and mix.
Serve.
Grind a bit more pepper and add the basil leaves.Your cold pasta with chicken is ready.
