First, we need to wash and clean the mussels well, also removing the beard that protrudes. In a pan, we put a bit of oil, sauté the garlic, add the diced pepper, and let it brown. Add the chopped tomato, deglaze with white wine, season with salt to taste, and add the mussels, cover with a lid and let cook for about 10 minutes, stirring occasionally (the mussels should open). Finally, add the fresh chopped parsley. Enjoy your meal!
